  • 1 egg
  • 1/4 cup of oil – preferably virgin olive or canola oil
  • 1 cup of sugar
  • 1 1/2 cups of flour
  • 1 tablespoon of baking powder
  • 1/2 tablespoon of baking soda
  • 1/2 tablespoon of ground cinnamon (you can add more if you are a cinnamon fan)
  • 1/4 tablespoon of ground nutmeg
  • 1/4 tablespoon of salt

Instructions

  1. Preheat your oven to 350 degrees and start making the muffin batter. Use a food processor or a strong kitchen blender to mix the cereal, flaxseeds and buttermilk. Mix until smooth and let it rest for half an hour.
  2. Once your oven is heated, coat a muffin pan – a 12-cup one would be ideal, but if you do not own one, just make two batches of six – with cooking spray.
  3. Add three sliced bananas to the cereal mixture and process it some more. Finally, add an egg, oil and sugar.
  4. Whip baking powder, baking soda and flour together with the cinnamon, nutmeg and salt in a separate bowl and add it to the cereal mixture. Process for a couple of minutes until completely smooth.
  5. Fill muffin cups with the batter and place the slices of the remaining banana on top of them. Bake for 20 minutes, let the muffins cool and enjoy!
